G's Squash, Ricotta and Iberian Ham Recipe

It's hard to put into words how tasty this dish is! The warm, oven-baked squash paired with the creamy ricotta and Iberian ham is a winning formula. My husband made this for me on one of our early dates and I've been hooked ever since (on both coincidently!) I roll this out at dinner parties and family gatherings alike and it never fails to garner euphoric mmmm's and ahhhh's!

Perfect as a starter or side dish. For two people, you will need:

1/2 Butternut squash (peel and dice into reasonably sized chunks)

10 slices of Iberian ham (use parma ham for a more cost effective substitute)

1 tub of ricotta

A couple of sprigs of thyme

A pinch of chilli flakes

1 clove of garlic (chopped finely)

A glug of decent olive oil

Pre-heat your oven to 200C/390f. Toss your garlic, chilli flakes and squash in a mixing bowl with a glug of oil. Spread across a baking tray and pop in the oven for 15 minutes so the squash softens with a caramelised texture.

Once ready, place on a serving dish and tear pieces of Iberian ham and dollops of ricotta cheese on top. Loosely chop the thyme and sprinkle on top!
